Warm up this winter with homemade Italian risotto

BEAVERTON, Ore. – When the weather turns cold, the Italians have a secret weapon: risotto. Now you can learn to make steaming bowls of this creamy rice-based dish with on upcoming Portland Community College non-credit class series.Risottos: Italian Culinary Series features four classes in melding this rustic dish with meats, vegetables, broths, saffron, aged cheeses and herbs. Chef Ron Mehta is a master at teaching students how to cook gourmet meals while infusing his classes with a sense of rich Tuscan tradition."This is the way your Italian grandmother would make risotto,"said Mehta. "Come learn how to make a dish that has been a favorite comfort food in Italy for generations."The series of four classes will take place from 6:30 to 9:30 p.m. Tuesdays, Feb. 3 through Feb. 24, in the kitchen of Bethel Congregational Church, 5150 S.W.
