Photos and Story by

BEAVERTON, Ore. – Looking for recipes to warm up your winter menus? Portland Community College has a spicy complement to January nights: a non-credit Mexican cooking class featuring authentic dishes. Mexican Cooking: A little Taste of Mexico will help you capture traditional flavors with fresh salsas and simple masa dishes. Instructor Ben Gonzales will show you how to do it the right way – blending fresh ingredients and spices to recreate the savory meals of the Mexican people. "Mexican cooking is so much more than tacos!"said chef Gonzales. "This is a fun opportunity for you to discover all that Mexican cooking has to offer, and take new recipes home for your family. Come to class with an appetite." The two-week class will be offered from 6 to 9 p.m., Mondays, Jan. 5 through 12, at the Pavilion Restaurant, 10700 S.W. Allen Blvd. Cost is $29 with $15 payable to the instructor for food. For more information, contact PCC Community Education at 503-731-6642.
