A Bit About Me 

Greetings!

My name is Emily Gaige (they/she) and I will be your instructor for this course. I’ve been teaching at PCC for 12 years in the Health Studies department and for two years in the Foods and Nutrition department. I have a Master’s Degree in Public Health and 17 years of experience working in health care administration.

My Philosophy in Teaching 

It is a priority for me to create a safe learning environment free from shame, judgment, and discrimination. My goal is to provide an inclusive space where we can share information, practice skills, and interact with tools that can empower us in our personal health and nutrition. Additionally, we will delve into external factors (social, cultural, environmental, political, etc.) that shape our feelings, ideas, and relationship with food.

Course Details

  • This class meets twice a week on Tuesdays and Thursdays from 1:00-2:20pm in person at the Cascade Campus.
  • Course content, readings, assignments, and quizzes are online via D2L. 
  • I have office hours right after class or on other days via zoom if you'd like to connect, ask questions, want to discuss any of the material, and/or discuss how I can best support your success.

Technology

  • There is no need to purchase books - all of the content you need for this course is embedded into D2L Brightspace.
  • There will be links to articles, interactive websites, videos, and blogs that require updated browsers (such as Chrome or Edge).
  • I encourage the use of Google Docs and Google Drive for submitting assignments, though Microsoft products like Word or PowerPoint also work well.
  • Having a webcam or microphone is not required since the class meets twice a week in person, though they are helpful if you choose to come to my office hours via Zoom. There will also be options to submit video or audio recordings instead of written assignments if you prefer, which would require the use of a camera or microphone.

No show policy

Your instructor can mark you as a "no show" if you do not participate in your class during the first week. This will remove you from the class.
