Course Description

Explores health, nutrition, and safety issues for children ages infant through preschool. Includes state licensing requirements in early care and education settings, family-style eating practices, USDA food program requirements, safe environments for children, healthy lifestyle practices, and childhood illness. Audit available.

Intended Outcomes for the course

Upon completion of the course students should be able to:

  • Demonstrate knowledge of age-appropriate health and safety practices 
  • Discuss the principles and practices of nutrition in early childhood including family-style eating practices.
  • Describe state licensing requirements for early care and education settings.

Course Activities and Design

Students Will:

  1. Evaluate early care and education environments based on state licensing practices.
  2. Develop lesson plans tied to nutrition and family style eating practices
  3. Complete quizzes or exams.
  4. Engage in activities and tasks related to course content.

Outcome Assessment Strategies

Students Will:

  • Attend and actively participate in class and small group discussions.
  • Complete written assignments
  • Complete written quizzes or exams.

Students will acquire skills and abilities relating to:

  • Linkages between development and safe environments.
  • Quality programming requirements as outlined through the state licensing regulations for early care and education settings.
  • Nutrition for young children including planning meals for infants-preschoolers and implementing family style eating practices.
