About the Instructor: Elizebett Eslinger

I am a fan of the Great British Bake-off (GBBO) television show and have baked all 104 signature challenges presented in the show’s 11 seasons. In addition to being an avid home baker, I am a mom, writer, and Executive Director of Write Around Portland.

My educational background includes:

  • Master in Public Administration – Nonprofit Management, Portland State University
  • Certificate – Teaching English as a Second/Foreign Language (TESL/TEFL), Concordia University
  • Bachelor of Arts – English/Political Science, University of Idaho
  • Associate of Arts – Political Science, College of Southern Idaho

My baking and creative projects are influenced by my lived experiences, including being a first-generation American born to immigrants from the Azores Islands. I have found in baking what I have also found in other creative pursuits: reflection, connection, and growth. Baking gives me space to re-focus, allows me to nail and fail projects, and reminds me to slow down a somewhat-hurried life.

With 20+ years of experience as an educator and home baker, I’m looking forward to bringing the spirit and camaraderie of GBBO to the PCC classroom!
