Course reviews nomenclature, methodology and procedures of nutritional assessment. Methods of diet, nutrient intake/deficiency and body typing are studied. Assess nutrient deficiencies, acute and chronic conditions, screening tools and anthropometrics (comparative measurements of the human body). Review biochemical data, nutrient pharmacology and clinical applications in a process-centered approach to nutritional assessment within the current American health care system.
