Course meets online 2-4pm PST (office hours online 4:30-5:30pm) or 5:30-7:30pm PST (office hours online 8-9pm). Engage in case strategy and diet overview, individual nutrients, therapeutic food procurement, cooking and menu planning. Food economics and the selection of whole foods ingredients will be referenced in the review of menu planning and specific therapeutic needs and special populations. Online courses require that students have basic to intermediate computer savvy, and are skilled in personal discipline, task organization and time mgmt. You should expect to invest a minimum of 2/3 hrs of study for every hour of lecture in order to be successful in this course.
